 This Sidamo Washed Bombe' undergoes a traditional wet fermentation process lasting between 36 to 72 hours. Following fermentation, it is carefully dried on African beds using clean plastic mesh and sheets.

This drying process typically takes around 9 to 12 days, during which the coffee is monitored to reach a moisture content of approximately 10%. In periods of intense sunlight, the beds are covered to ensure the coffee does not over dry.

This microlot is from carefully selected cherries from the smallholders of Bombe and Shentawene farmers delivered to our partner Mill at Shentawene and the Awruja family.
